The selection of vineyard blocks in the Stellenbosch region takes place prior to the harvest season. The grapes grow in a Mediterranean climate, rooted in weathered granite soil. Vines are trellissed on a five-wire hedge system. Grapes were harvested at optimum ripeness at the end of February and early March and picked at 23 – 25ºB. Fermentation took place in static red fermenters. Cold soaking lasted for two days prior to primary fermentation on the skins to lengthen the contact time between juice and skins for more intense extracts. It was fermented until dry on its skins at 24 - 27ºC, followed by malolactic fermentation in stainless steel tanks. Extraction of colour and aroma components were achieved by means of pumpovers and delastage. Maturation happened in stainless steel tanks with 2g/l of selected medium toast French oak staves for approximately eight months.
A medium to full-bodied wine with pronounced aromas of ripe berries, mint and oak spice. Elegant and mellow on the nose with notes of mulberries, cassis and plums that follow with underlying nuances of wood and vanilla. A refined palate that is backed by soft and supple tannins to ensure a pleasant finish.
Ready to be enjoyed now with the potential to age for three years.
